Over three hundred recipes is drawn from the memories of several English hostesses and cooks who have lived and worked in distinguished country houses, cooking small light meals as well as large and grand ones for over ?fty years. Mrs Stanley, who compiled this book, is an accomplished cook herself, but her principal contributor is Mrs Menzies, the daughter of a head forester on the estates of the Duke of Montrose, whose ?rst job as a cook was with Mrs Ronnie Greville of Polesden Lacy. Those were the days when a dozen or so people sat down every day for luncheon or dinner, with ?ve or six courses. It was also a time when the mistress of the house was liable to ask suddenly for changes in the menu or last minute additions. As a result a country house cook had to be prepared for anything, have a considerable range of dishes in his or her repertoire, and a great deal of ?exibility and skill. This delightful book does more than bring to mind the grand style of country house life; it provides a practical guide to some basic (and excellent) English dishes, as well as offering an interesting and unusual repertoire to the cook who is eager to try out something new, or a different approach to something he or she knows already. The recipes are carefully prepared, each one having been cooked through many times over by Mrs Stanley, with all the measurements carefully checked and stated. They are tersely written, the whole emphasis being to help the busy cook who needs to work fast. It seems mouth-watering reading nevertheless for those who cook only vicariously, and is decorated with charming views of English country houses taken from nineteenth-century prints, the great age of English country house living. A glossary, a list of oven temperatures, and a table listing American and metric equivalents of English weights and measures will enable American readers to adapt this guide to American tastes and appetites.
