It was largely because of such interest, and interest in learning more, that a committee of the ANU Staff Centre was formed to organise and run a wine symposium which would bring together a dozen of the leading winemakers from all over the country, to talk about this art. The papers in this book represent the proceedings of that symposium. As far as the committee is aware this is the first time that a symposium of this nature has been held in Australia, but to judge from the response to the idea, it is long overdue. The committee is particularly pleased that such a blending of science, art and community interest should take place within, and under the auspices of, the Australian National University.
